Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Gently fry garlic and shallot in olive oil. Add half the mushrooms and all the thyme and fry briefly.
STEP 2
Add the stock and let it simmer for 15 minutes. Then puree the soup until smooth with a hand blender.
STEP 3
Fry the remaining mushrooms with the bacon, if using, in a dry frying pan until golden brown.
STEP 4
To make a roux, melt the butter in a small pan, stir in the flour and fry for one minute without letting it colour. Stir the roux into the soup little by little until it thickens slightly.
STEP 5
Stir in the cream, taste for salt and pepper and serve with parsley, fried mushrooms and, if desired, a few drops of truffle oil.

Cycled last week on my beautiful racing bike. It was stolen two days ago. Making soup is the best distraction to take my mind off my frustration. It's fall, or mushroom season. So I make a delicious wild mushroom soup. Yesterday I received a beautiful giant bovist and boletes from Daniel Poolman (chef at http://www.spraakkamerhetreestdal.nl/) to use in the soup.
