Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Put the peels of the asparagus in a pan with 1 litre of water and bring it to around 80 degrees and remove it from the heat. Let this cool. Remove the peels from the stock.
STEP 2
Place the asparagus in about 500 ml of cold water in a roasting tin with mace and salt. Bring it to the boil and let it simmer for 2 minutes. Remove from the heat and let it cool in the liquid. Remove the mace from the liquid.
STEP 3
Fry an onion in a soup pan with some butter. Then add the flour and make a roux.
STEP 4
Add the liquid from the asparagus and the stock and add the milk.
STEP 5
Bring it slowly to the boil and season with chicken stock, salt, pepper and some Worcestershire sauce.
STEP 6
Cut the asparagus into pieces for garnish.
STEP 7
Ladle the soup into bowls and garnish with pieces of ham, boiled egg and parsley.

The asparagus season has been open for a while. When you make asparagus, the peels are a nice base for asparagus soup. So these do not have to go into the bin before you have used them as a basis for the stock.
