Another challenge. We recently had a delicious Indian meal with friends. The request is an Indian soup. Absolutely fine!

Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
I always love to start making the soup/stock on Saturdays.
STEP 2
Place the chicken stock, ginger, garlic and lemongrass (you can add the coriander stems if necessary) in a large pan and let it simmer for at least 15 minutes. I personally let it simmer for 2 hours so that the flavors can develop properly. Do not let the soup reduce too much, otherwise the soup will become too salty.
STEP 3
You can always add water to thin the soup.
STEP 4
TIP: taste the soup regularly
STEP 5
The next morning I strain the stock and put the soup back on the stove.
STEP 6
Add the red peppers and chicken to the stock and let it simmer for a while.
STEP 7
In the meantime, do you have time to cut the coriander and, in my case, spring onions?
STEP 8
Add the coconut milk and let it simmer for a while.
STEP 9
Season the soup with the fish sauce, lime juice and (cane) sugar.
STEP 10
Pour the soup into a bowl and add the optional ingredients.
