This lovely weather makes me look forward to summer. So this week summer is in full swing and time for a soup that has been on my list to make for a while. I think it's a soup for nice weather. I imagine myself in Italy with this soup. A tasty soup with few ingredients and not difficult to make.
BEFORE YOU START

Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Gently fry the shallot and garlic in a little oil.
STEP 2
Add the stock and let it steep for five minutes.
STEP 3
Beat the eggs with the Parmesan cheese.
STEP 4
Stir the egg mixture in a thin stream into the gently simmering stock so that fine strings are formed.
STEP 5
Season with Tabasco and serve with basil and parsley.
