Another challenge. We recently had a delicious Indian meal with friends. The request is an Indian soup. Absolutely fine!

Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Put some sunflower oil in a (soup) pan and add the onion, garlic, red pepper and oregano. Fry this briefly and then add the stock.
STEP 2
Add the bay leaf, cloves and chicken thigh to the stock. And let this simmer on low heat for an hour.
STEP 3
Remove the bay leaf and cloves from the stock. Remove the chicken from the soup and pull it into small pieces/strings and add them back to the stock.
STEP 4
Add the tomatoes and lime to the stock and let it simmer for another fifteen minutes on low heat.
STEP 5
Ladle the soup into bowls and garnish the soup with coriander, avocado and serve with the tortillas.

Time for a new soup again. Lime is of course tasty (fresh) in this weather. This is definitely in my top 5 soups. I love it. Yesterday I set up the broth for an hour. I always find preparing a soup a pleasure. The scents that are released make me completely happy.
