Dutch kale soup
When it is really cold, kale is such a comforting choice. This hearty soup is easy to make and ideal for chilly days. As luck would have it, kale was on offer this week.

Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Preheat the oven to 180 degrees.
STEP 2
Put some oil in a frying pan. Cut an onion in half and fry it (almost black). Add the oxtail and fry until nicely brown.
STEP 3
Then add the roughly chopped (green of the) leek, celery, carrots and celeriac and fry for a while.
STEP 4
Put everything in a roasting tin and put it in the oven for 45 minutes.
STEP 5
Remove the roasting tin from the oven and put everything in a (soup) pan. Add water until it is completely covered. Add the bay leaves, thyme and cloves to the stock and let it simmer for 3 hours over low heat.
STEP 6
This morning I removed the oxtail from the soup and strained the soup. Cut all the oxtail meat into pieces and add to the stock.
STEP 7
Add the leek, celeriac, carrots, celery and madeira to the soup and let it simmer until the vegetables and stewing beef are done.
STEP 8
Ladle the soup into bowls and garnish with parsley.

It's not a cheap soup, but I still wanted to make it sometime. I already let the broth steep last night, so I could finish the soup today. Yesterday I received an explanation on how to manage the website.
