Another challenge. We recently had a delicious Indian meal with friends. The request is an Indian soup. Absolutely fine!

Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Place the onion, garlic, celery and leek with some sunflower oil in a (soup) pan and fry until translucent.
STEP 2
Add the stock, courgette, carrots, diced tomatoes (with juice), peas, oregano and thyme and let it simmer for half an hour.
STEP 3
Make the soup a bit spicy with a few drops of Tabasco.
STEP 4
Ladle the soup into bowls and serve with the Parmesan cheese, basil and parsley, so that everyone can garnish their soup to their own taste.
STEP 5
Serve with some bread and some spreads if desired.

Didn't make soup last week, because it was Mother's Day so I didn't have to do anything for a day. Today it's time for soup again. Minestrone soup has been on my list for a while. A soup in which you can put whatever vegetables you have in the fridge.
