Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Yesterday I cooked the chicken legs for 5 hours in about 2 to 3 litres of water.
STEP 2
The next day, remove the chicken legs from the stock and pick the chicken legs into small pieces. Put the stock back on the heat.
STEP 3
Now first make the garlic paste.
STEP 4
Place the sesame oil, garlic, sesame paste, rice vinegar and sesame seeds in a bowl and stir well.
STEP 5
Put this in a frying pan and let it heat up. Then add the chicken and stir regularly.
STEP 6
Place the chicken in the stock and then add the chili oil.
STEP 7
Let this simmer for a while. Taste the soup and add some extra ingredients to taste (e.g. rice vinegar, sesame oil, chicken stock)
STEP 8
Meanwhile, cook the ramen noodles according to the instructions on the package. Sprinkle some sesame oil over the cooked noodles.
STEP 9
Ladle the stock into bowls and add the garnish: ramen noodles, spring onions, soft-boiled egg, coriander and possibly bean sprouts.

My eldest really loves Japanese cuisine. In recent years we have been to the Christmas market in Dusseldorf and Cologne. A visit to a Japanese restaurant is an integral part of our weekend getaway. In Cologne we even went to the Japanese restaurant twice, because we really wanted to try the miso (soup) before leaving. Today I am making or at least trying to make garlic ramen.
