Another challenge. We recently had a delicious Indian meal with friends. The request is an Indian soup. Absolutely fine!

Chop everything first and get your ingredients ready.
Use a roomy pot so you can stir easily.
Keep some extra stock or water to hand.
METHOD
STEP 1
Last night I already prepared the beef.
STEP 2
Put a knob of butter in a frying pan. Sprinkle some salt and pepper on the beef and fry until brown on all sides. Add 1 litre of beef stock, 2 bay leaves and a few sprigs of thyme and let it simmer on low heat for an hour and a half.
STEP 3
Remove the beef steaks, bay leaves and thyme from the stock.
STEP 4
Put the stock in a (soup) pan. Cut the beef into small pieces and add them back to the stock.
STEP 5
Now add the bacon strips, garlic, onions, carrots, peppers, tomatoes, tomato puree, oregano, thyme and red wine to the stock and let it steep for fifteen minutes.
STEP 6
I still had some beans (leftovers from the week) in the refrigerator. I also added that to the broth.
STEP 7
Season the soup with Tabasco and, if desired, some extra oregano and thyme.
STEP 8
Ladle the soup into bowls and garnish with parsley and crème fraiche.

Yesterday I cycled 80 kilometers (on my racing bike) during the Zuiderzee classic. It rained all the way...eventually it was thoroughly wet and cold. On the way home I was thinking about what soup I was going to make today. Suddenly I knew goulash soup. I'm looking forward to that!
