Blend part of the pot
Spoon a few ladles of vegetables and stock into a blender and return the mixture to the pot. The soup stays recognisable but gains more body.
Use a suitable thickener
Potato and white beans provide natural, gentle thickening. Cornflour works quickly in a clear soup: first stir a little into cold water, then add it while stirring.
- Use 1 tablespoon of cornflour per 500 ml as a starting point.
- Cook for one more minute after adding cornflour.
- Do not add flour directly to hot soup; it will form lumps.
- Leave the lid off if you want the soup to reduce.
Think about flavour too
As soup reduces, its salt and seasonings become stronger. Taste it again only after it has reached the thickness you want.
