Use contrast
A creamy soup becomes more exciting with something crunchy. A hearty meal soup benefits from something fresh. Consider not only how a garnish looks, but also its temperature, texture and acidity.
Our seven firm favourites
Choose one or two finishes, not everything at once. This keeps the soup itself at centre stage.
- Croutons with garlic oil.
- Toasted seeds or nuts.
- A spoonful of yoghurt, crème fraîche or plant-based cream.
- Fresh herbs such as parsley, coriander or dill.
- Lemon zest or a squeeze of lemon juice.
- Crispy chickpeas.
- Herb oil or spicy chilli oil.
Serve at the very last moment
Add crunchy garnishes just before eating so they stay crisp. A warm bowl with a cool spoonful of yoghurt or a few fresh herbs instantly looks thoughtfully finished.
